Just create an all black menu with no motion/audio, no buttons, no link anywhere. Set the end action of that audio only timeline to that menu. The remote control can always get them back to the menu.

No. To get an HD picture, you must use a bluray player, not DVD.

The amount is not so much the issue, since you don't actually resize. You change the transcode settings. You are probably going HD to SD, which probably means you need to apply the "scale to fill"...
